Mushroom Meatballs

I wanted to make quick and easy vegan raw meatballs tonight... but with a broken dehydrator our options for vegan meatballs were limited (true texturized meatballs should be dehydrated or cooked to dry them out and get the true meaty form). Well tonight, ain't nobody got time for that. I decided I wanted them RAW.and FAST. So keep in mind these "meatballs" are basically mush.. that you can make into balls and top on your pasta, that you can stuff into a wrap or sandwich, that you can top on a salad.. they're wholesome, nutritious and despite lacking the texture of a true meatball their taste is OUTSTANDING. The benefit to the texture is if you eat them over veggies and/or pasta you can literally blend and stir them in if you want. You can have fun with this one and modify ingredients to your liking, take away or add whatever you want. Get creative! Don't let the mush deter you!




I DID NOT measure my ingredients so you can adjust these however you want! This recipe was inspired and modified by a meatball recipe on Fragrantvanilla.com. In above photo I have them topped over baked spaghetti squash in a homemade creamy tomato basil sauce (can of diced tomatoes + 1 cup soaked cashews + handful of fresh basil + cayenne pepper and salt to taste blended). Delicious combo!

Ingredients:

2 heaping handfuls of mushrooms
1 cup or so of marinated mushrooms
heaping handful of sundried tomatoes
1 carrot
1 green onion or another onion of choice
~1-2 tablespoons garlic
~2 tablespoons ground flax (add more if you need to "bind" everything together more once it's blended)
sprinkle of basil or a few fresh leaves
dash of oregano or a fresh leaf
~1-2 tablespoons miso paste
~¼ cup of nutritional yeast
~½-1 cup walnuts (pre-soaked, optional)
sea salt to taste

Directions:

Blend everything together until smooth in texture. Add and adjust ingredients to your liking. To dry out and bind more, add more flax. To make more moist and bind add more miso or a little olive oil. You now will have a "batter" that you can scoop out into meat balls to top or incorporate into your meals! IF you have a dehydrator feel free to try drying them for a few hours until a more "meaty" texture is achieved. Enjoy :)
