Microgreens with simple tahini dressing

This delicious quick n easy salad is a great use for your home grown sprouts or micro greens! (Sprouts are germinated seeds that are usually grown in water and are harvested when they literally just "sprout" out of the seed, whereas micro greens are grown in soil and are harvested as tiny miniature plants). Both forms of growing are beneficial as they are easier for the body to digest than in their seed form, and around 6 times as much nutrients as the plant in their adult form. Plus they've got phytonutrients and an array of vitamins.. you can't go wrong with adding sprouts or micro greens to your salads, soups, stir fries, wraps, sandwiches and more! If you grow them yourself and just love them so much or have an overabundance you want to use while they're still fresh, a full bowl of them with creamy tahini dressing really hits the spot! Give this a go if you want something simple and wholesome that your body will thank you for as an in between meal snack, or a perfect compliment to any meal. Ingredients:

Sprouts and/or micro greens (I used buckwheat micro greens and mung bean sprouts)
Simple Tahini dressing (tahini and apple cider vinegar)

Directions:

Make your dressing by simply blending together apple cider vinegar and tahini. You can add water as needed to thin it out more.

Throw some sprouts and micro greens in a large bowl and drizzle the dressing on top. Top with nuts or seeds of your choice! I used hemp. Enjoy!
