Nutty "meat" n "carrot" cheese platter

Went crazy with the raw scene today (yes we have shit tons of leftover rice n beans in the fridge by the tray load.. so I've literally been incorporating this into most meals I've been making, even if that's just by putting a thin bed of it in the bottom-- technically not raw I know, but it can easily be subbed out for just about anything). Today for lunch I threw together a little platter and I'm thankful I did.. because it reminded me how amazing my nutty taco "meat" is, which is a raw and hearty mixture of walnuts, sunflower seeds, mushrooms and spices, YUM! I threw it on a bed of rice and topped with some delicious carrot nacho cheese, but the possibilities are endless (put it in a taco, burrito, in a nacho platter, on a salad, in a sandwich, use as a dip with crackers or veggies... ahhh you can do anything!) but the best part is it's protein packed and is a pretty good substitute for meat. Even better is that it's easy and QUICK to make! The carrot cheese is very quick and easy to throw together as well. Nutritious, quick and delicious are my favorite kinds of recipes. This one is basic and leaves endless opportunities for your creativity. A great starter for those that want to enjoy more "raw" meals  (and those who wait something "meaty" and "cheesey"!) and want to see how easy raw food can be to prep. Enjoy!




Ingredients:

Batch of nutty meat free taco "meat"

Layer of something to top it on (rice, quinoa, any whole grain, toast, or a salad)

Batch of Carrot CHEESE

Veggies of your choice to top it with; I did sliced cherry tomatoes, mung bean sprouts, chickweed, and green onion slices. Other ideas include pumpkin seeds, garbanzo beans, other beans, shredded veggies, etc.

Directions:

Layer on a scoop of your "meat" a top of your bed layer of whole grains or salad (or whatever else you can think of!)

Smoother it with some delicious carrot cheese (which is just as fast and easy to prep as the meat itself)

Top with veggies, nuts, seeds, and whatever
