These cookie dough bites are raw, fast, easy, and are actually HEALTHY for you! How crazy is that? They literally involve throwing everything into a mixer or food processor and rolling into balls with your hands. So simple-- so fast! Thank you "Oh She Glows" cookbook for this delicious snack <3
Ingredients:
1 ½ cups rolled oats
2 tablespoons coconut oil
2 tablespoons smooth peanut butter, almond butter or sunflower seed butter
¼ cup pure maple syrup or other natural sweetener of your choice
1 teaspoon vanilla extract
½ cup almond flour or meal (I didn't have any so I used straight up raw almonds and it turned out AMAZING with the chunks of them in it!)
¼ teaspoon sea salt
2 tablespoons vegan dark chocolate chips or chopped dark chocolate
Directions:
Blend everything together in a food processor or mixer except the chocolate. Blend until as smooth as possible (if using whole almonds, it's okay if they're in chunks or whole!). Add chocolate chips and gently mix in. Separate and roll into balls. You can eat them raw or stick them in the freezer or fridge to harden up a bit. Stick them in a tupperware or ziplock and carry them on the go as a protein boosting snack! They're much more than just a dessert but a protein packed and healthy alternative to "junk food". They taste amazing .. literally like cookie dough! Enjoy :)
