Love nut butter?? Wanting even MORE protein in your plant based fuel? This delicious and protein packed "butter" has a mixture of FIVE nuts and SIX seeds in it and such an abundance of filling nutrients and dense protein. Smother it on some toast, pair it with jelly, use it as a dip for apples, pretzels or celery or team it up with a frozen banana in a wholesome smoothie. The options for what to do with it are endless, and once you make a fresh batch of it, the jar will stay fresh in your fridge for about a month. This recipe was inspired by "The No Meat Athlete".
Ingredients:
1 1/2 cups mixed nuts (preferably salted), try a combo of cashews, walnuts, pistachios, hazelnuts, & almonds
1/2 cup mixed seeds, try a combo of sunflower, pumpkin/pepitas, sesame, chia, hemp and/or ground flax seeds (Add extra ground flax for more healthy omega 3s!)
One 16 oz. jar of creamy peanut or almond butter, preferably unsalted
Directions:
Pulse the mixed nuts in a food processor until chopped as small as possible. Transfer to a large bowl.
Stir in your mixed seeds and nut butter with a spoon or rubber spatula until combined. (Do not mix in the food processor to maintain the chunky texture that gives this a tasty crunch!)
Transfer to a mason jar or tupperware for storage. Keep in the fridge, and use within a month to preserve the healthy oils in the nuts and seeds!
