Watermelon Steaks

This is one of my favorite recipes I’ve ever made! It’s easy, creative and unexpected. I really love seeing people’s reactions to giving this a try! It’s getting to be watermelon season, and with BBQ’s in full swing this cruelty-free alternative to regular steak will knock the socks off all your friends. Although it is cooked up like steak it has more of a poke kind of vibe. Savory, delicious and refreshing on a hot day! Eat it on a plate with a bunch of tasty sides or throw it atop a poke bowl. Ingredients:


Fresh watermelon, chopped (any size or shape is fine, but I like to cut “fillet” size rectangles about 1” thick)


Marinade:

(Note, I do not really measure things, I eyeball them! That’s just my cooking style especially when making my own recipes. This can all be adjusted for the amount of watermelon you’re grilling up which is why I do proportions and not exact amounts, the amount of marinade needed will vary greatly if you’re cutting up 1/4 of a watermelon vs. a whole one)

6 parts soy sauce or liquid aminos

2 parts apple cider vinegar

1 part toasted sesame oil

Splash of lime juice

Chopped onions

Chopped scallions or green onions

Fresh minced ginger, paste, or powdered ginger to taste

Roasted garlic and herb seasoning (has a blend of pepper, garlic, paprika, etc.) but you can season with any other herbs or flavors of your choice. If you like it spicy add a bit of cayenne, or if you like it smoky add some smoked paprika or a small splash of liquid smoke


Directions:

Mix all of the marinade ingredients together in a Tupperware container or dish that’s large enough for all your chopped watermelon. Add the watermelon pieces into the marinade (submerge it as much as possible), shake it up really good, and let it sit in the fridge for a minimum of 5 hours. Shake up the Tupperware a few times and/or rotate all the watermelon pieces to fully get them all submerged and coated in marinade as much as possible.

Warm your grill up to about 400 degrees F and lay the watermelon steaks out to cook for about 7-10 minutes on each side with the cover on. After flipping, drizzle some more marinade on each steak to let it cook in there really good. Serve warm, topped with any leftover marinade and enjoy!
