Easy raw marinated spicy mushrooms

THIS is super simple, and a great flavorful way to enjoy mushrooms. I'm on a raw diet kick so I am enjoying eating them raw (in a wrap, in spring rolls, in raw burritos or even atop a salad) but you can easily use this mixture as a "filling" inside another veggie like a bell pepper, in a stir fry, as a stuffing, mixed with rice or pasta... the possibilities are endless. I made them today and put them into a rice wrapper with back-yard grown spinach, counter-top grown sprouts and locally sourced carrots, bell peppers, onion and buckwheat micro-greens with a soyaki sauce (YUM!). I really like mushrooms but sometimes (especially when eating them raw) I feel like I'm running out of ideas of what to do with them if I'm not stuffing them with something else. This marinade is quick and easy and fine to do if you're in a rush (they don't need to sit in it very long, their sponge-like consistency will suck it right up!). Ingredients:

3 oz of mushrooms
juice from ¼ lemon
a few bits of thyme or basil
1-2 tsp garlic
chopped green onion
handful of raisins
dash of red chili flakes (or more to taste)

Directions:

Mix everything except the mushrooms together in a bowl. If mushrooms are large you can chop them up so they will have more surface area to absorb the marinade. Toss mushrooms with the marinade and let them sit for at least a few minutes, mixing a few times as they sit so they can be fully saturated. You'll notice the "sauce" starts to get soaked up from them. Once they're saturated they're done! Use the full mixture as an addition to any meal in any way you can come up with. Enjoy!
