Watermelon Steaks

This is one of my favorite recipes I’ve ever made! It’s easy, creative and unexpected. I really love seeing people’s reactions to giving this a try! It’s getting to be watermelon season, and with BBQ’s in full swing this cruelty-free alternative to regular steak will knock the socks off all your friends. Although it is cooked up like steak it has more of a poke kind of vibe. Savory, delicious and refreshing on a hot day! Eat it on a plate with a bunch of tasty sides or throw it atop a poke bowl. Try it out and let me know what you think!

Lion’s Mane Mushroom Steaks

This is definitely my FAVORITE way to cook a good ole’ lion’s mane mushroom! Love mushrooms but not always a fan of the texture? This method will ensure they’re meaty, flavorful, tender, and the best substitute to eating dead animal flesh. It’s very easy to keep animals off your plate when you can find tasty and wholesome alternatives! Lions Mane Mushrooms also have plenty of research proven medicinal benefits that revolve around brain health.. including improved memory, protection against dementia and Alzheimer’s, regeneration of brain cells, relief for mild depression and anxiety symptoms, plus aiding in the healing of nervous system related injuries. What are you waiting for, go grab some lion’s mane and let’s get cooking!

Part 4 of “You Do NOT Need an RV to Travel” (a witty recap of our cross country month long road trip in a Prius with 2 big dogs)

This is part FOUR of a multi-post saga about our month long cross country road trip in a prius - a 31 day adventure my husband and 2 dogs and I took in the late summer of 2021 (yes… it’s actually taken me 2 years to finish writing the blog, because I’m a busy lady and don’t blog too often any more)! Anyway, if you came across this post before reading the rest of our journey, you may want to check out Parts 1, 2 & 3 first.

PART 3 of “You Do NOT Need an RV to Travel” (a witty recap of our cross country month long road trip in a Prius with 2 big dogs)

Yes. It has actually been almost 2 years since our epic month long road trip and I FINALLY have gotten around to blogging part 3. Better late than never… right? 🤪 Anyway, here are the deets about the first part of our second half of our journey in the summer of 2021! If you’re stumbling upon this and have not read about our previous adventures, I recommend reading Part 1 & Part 2 first. Then after this there is one final leg of the journey… Part 4!

Crispy air fried tofu with green pistachio garlic sauce

Craving something filling, delicious and different that only takes 15 minutes to make? I got you! This delicious air fried tofu recipe is simple and easy - just takes minutes to throw together, and the green pistachio garlic sauce is perfect for people like me that enjoy a nice healthy creamy dressing (I can’t stand eating anything too dry, I always need a sauce!) but I get bored of eating the same thing all the time. This has flavor and is filled with superfood goodness! Give this a try and let me know what you think!

Vegan Pumpkin Cheese Fondue

I whipped up this recipe for a Halloween get together we hosted for a small group of friends last night, filled with spooky stories, vegan eats and good company. We used to host large scale potlucks at our home regularly before the pandemic hit, and this was our very first time getting back into hosting any sort of party after we’ve become a bit too comfortable with our introvert lifestyle. If you remember our big potlucks from back in the day - do not worry, because they’re comin’ back soon! If you’d like to be included in the next one let us know - we plan to have them open for all of our vegan (and aspiring vegan!) friends 😊

Homemade electrolyte drink (aka, “Gatorade”)

Sicknesses are going around and it’s more important than ever to stay hydrated. As someone who has been avoiding processed sugars for a long time now (they trigger migraines amongst other things for me), it’s shocking to me that doctors are actually recommending sports drinks like Gatorade that are literally filled with processed sugar, dyes, and “natural flavors” amongst other things. They may have electrolytes and supposedly be helpful for hydration but those processed sugars and additives have other negative effects on the body and how you mentally feel - so I’ve come up with a simple, cheap, and healthy homemade alternative to make at home when you’re sick or need a boost after strenuous physical activity! This is perfect for anyone on any diet as it is clean, raw vegan, with minimal ingredients- but it sure does the job in hydrating and making you feel better!

Plantaholics - our favorite plant nurseries in SW Florida

Heyyy! Those who know me well or follow me on social media know my husband and I are legit plant addicts. We love plants so much that we literally bought a house 6 years ago just for the plants (our apartment complex kicked us out for having too many). No regrets there though - that was a very great decision for a number of reasons. But anyway - we have been shopping and buying plants literally everywhere we go, and have some favorite gems in Southwest Florida near my mom (she lives in Venice, so we get to visit a lot of these nurseries whenever we visit her). We live in north Florida so these are all about 3-4 hours south of us, but well worth a trip if you’re down in that area visiting.

Vegans in Savannah

We spent some time in Savannah, GA this past March and we really loved it there! We of course brought all the dogs, and we also had my art display because we traveled there for Savannah’s first annual Vegfest as a vendor. I wanted to highlight some of our favorite things to do and vegan eats from our trip - and as always, all the deets about how we travel since I constantly have people ask me some form of the following question: How do you travel everywhere with 3 big dogs, in a prius, with so much stuff, and where do you stay and find vegan food along the way? If you’re curious to know any components of that question, read on to find out.

This is PART 2 of “You Do NOT Need an RV to Travel” (a witty recap of our cross country month long road trip in a Prius with 2 big dogs) - a multi-part blog about our 2021 cross country trip (yes, I’m slow here… life has been busy so I’m finally getting this posted)! If you haven’t yet, please check out and read PART ONE here to learn about some backstory to our trip, preparations we made, and details about our first 5 days traveling and living out of a prius with 2 big dogs. Here’s the next part, starting with day 6!

Vegans in Miami

We went to Miami last weekend and had an AMAZING time! We traveled for “work” but fit in lots of leisure too (which for us is essentially just amazing vegan food, lots of plants, and time with our pups). To learn more about some of the best ALL vegan eateries, how to travel with 3 pitbulls in tow (in a county with a “pit-bull ban”), visiting some of the best plant nurseries and edible plant sites, AND - added bonus, we always share how we manage to fit so much crap in the prius (because we also had my entire art display with us for a festival). YES.. it was an awesome trip, and we can’t wait to go back in the future!

Watermelon Poke Bowl with Homemade Sriracha Mayo Dressing

Before I went vegan, I used to really enjoy eating fish sushi and ahi tuna bowls. Since I went vegan almost 8 years ago, fish is one of those foods I still occasionally miss - specifically sushi grade tuna and salmon. When we were out in California (more info on that coming soon — in the next parts of my road trip blog I still have to finish writing!) I fell in love with a watermelon poke bowl from Joi Cafe in Ventura County. Considering that watermelon is one of my favorite foods PERIOD… (and that I also dabble in being a part time fruitarian) I knew this was a recipe I wanted to try making at home. It may sound a little odd until you try it.. but if you like watermelon and like poke bowls, this is guaranteed to become your new favorite meal.

A guide on what to pack for a cross country trip (in your car!)

To give this post a little more context, you may want to check out my recap of our recent cross country trip (PART 1). We spent a month traveling in and basically living out of our prius.. with two big dogs! Here’s a guide on what we packed, which I’m sharing in hopes to help out others planning a similar trip to ours. Credit goes to my husband Josh for putting together our original packing list, which of course was modified and adjusted as we started packing the car and were ready to hit the road!

Vegan Ravioli

Here's the perfect easy recipe for homemade vegan raviolis! If you're like me and raviolis were once a staple food for you before you made the change to go vegan.. or perhaps you're looking for dairy-free recipes and substitutes for cheese but love Italian foods and cannot live without the combination of pasta, cheese and sauce (that's me!). Whatever your reason for wanting to give these a try, these raviolis are simple and fun to make, and you can stuff them with just about anything! I kept it simple here, filling them with cashew cheese and some kale. I made the cheese from scratch but you can use store-bought vegan cheese to save some time, or even include seitan and plant-based meat substitutes or other veggie combos for unique flavors and varieties. Have fun, and if you make these let me know how they turned out! Recipe was modified from Pastabased.com.

Eggless Eggrolls, aka Fried Spring Rolls - Vegan!

This super easy recipe allows you to throw together your own veggie eggrolls/fried springrolls.... but no eggs are involved! Fully plant-based, this recipe is quick, versatile, and you can fill them with whatever ingredients you have available. Enjoy!
